Reserve a 90lb quarter cut to your specifications.  Once you place the order, a cutting sheet will be sent to you for butchering instructions.

Price is based upon hanging weight plus processing.  An average quarter is 200lb hanging weight which costs $760 ($3.80/lb).  Average processing is $195.  Average meat in your freezer is usually 50% hanging weight or 100lb for the average quarter.
